1. Chicken coconut korma
Serves: 2 Preparation time: 5 minutes Cooking time: 15 minutes

A tasty korma recipe for those who need a curry in a hurry.

Ingredients:
• 1 tablespoon ground ginger
• 1 garlic clove, finely chopped
• 400g chicken breasts, cut into small pieces
• 1 onion, finely chopped
• 2 tbsp oil
• 1 tablespoon coriander
• 1 tablespoon ground cumin
• 1 tablespoon turmeric
• 1 tablespoon chilli powder
• 400g chopped tomatoes
• 100ml water
• 300ml light coconut milk
• Salt and pepper to season

Instructions:
First, Heat the oil in a large pan and fry the chicken until lightly browned.
Then, Add the onion to the pan and fry until softened.
Add the tomatoes, water, coconut milk, coriander, cumin, turmeric, chilli, ginger and garlic to the pan.
Cover and simmer on a medium heat for 10 minutes.
Serve it up with brown rice, naan bread and some mango chutney if you’re feeling fruity.

2. Speedy sweet and sour stir fry pork
Serves: 4 Prep time: 5 minutes Cooking time: 10 minutes

An ‘easy peasy’ stir-fry for a midweek meal in minutes. Why not try our quick and simple sweet and sour pork - a healthy alternative to a takeaway.

Ingredients:
• 2 tablespoon Thai red curry paste
• 1 chopped red onion
• 200g chopped green beans
• 500g (1lb) pork fillet, thinly sliced 
• 2 tablespoon sunflower oil 
• 200g chopped pineapple
• 200g chopped tomatoes
• 1 tablespoon Thai fish sauce (nam pla)
• 1 tablespoon honey
• 1 tablespoon lemon juice
• 1 tablespoon basil

Instructions:
First, put a wok or large pan on a high heat and add 1 tbsp of the oil.
Then, when the oil is hot add the pork and curry for 2-3 minutes, until cooked through.
Add the pineapple and onion to the pan and stir fry for a further two minutes until it becomes caramelised.
Finally add the beans and 2 tbsp water and cook for a minute.
Add the tomato halves, fish sauce, honey, basil and lemon juice.
Serve immediately with rice and enjoy!




3. Sweet Potato and Black Bean Burritos

Ingredients:



• ½ red bell pepper



• 1 tablespoon jalapeno, diced 



• 2 tablespoons olive oil 



• 1 small onion



• 2 cloves garlic, minced 



• 1 small sweet potato, cubed



• 1 can black beans, drained 



• 3 ounces cream cheese



• ½ teaspoon salt 



• Whole wheat tortillas



• 2 tablespoons fresh coriander 



• Cherry tomatoes, halved




Instructions:



First, Place sweet potatoes in a microwavable bowl, add a tablespoon of water and cook for 3 minutes



Then, Heat oil over medium heat and add onion, garlic, salt and peppers and cook until onions are soft



Pour in the beans and sweet potato cooking until heated through



Add in cream cheese and stir until combined



Scoop onto whole wheat tortillas and top with cilantro and tomatoes.



Serve & enjoy!






4. Chili Garlic Turkey Skewers with Tzatziki Sauce



Serves: 4 Prep time: 15 minutes Cooking time: 5 minutes

Ingredients:



Chicken Skewers



• 2 tablespoons chili powder



• 1 garlic clove, crushed 



• 400g turkey steaks, cut into chunks 



• 1 tablespoon olive oil



• 2 tablespoon honey 



• 1/4 teaspoon salt 



• 1/4 teaspoon pepper



Tzatziki Sauce



• 200g Greek yogurt 



• 2 tablespoons lemon juice



• ½ garlic clove, minced 



• ½ chopped cucumber



• 1 tablespoon of mint, chopped 



• Pinch of salt & black pepper




Instructions:



First, In a small bowl mix all marinade ingredients together using a fork.



Then, Add the turkey to the bowl and use your hands to work in the marinade



Place in the fridge and let marinade for 10 minutes



Heat a large pan over medium heat and add the olive oil



Add the marinated turkey to the skewers and cook on each side for 4 to 5 minutes, until cooked through.



In the meantime mix all the ingredients together for the Tzatziki sauce and dollop into a ramekin



Serve immediately, garnishing with some fresh coriander, Tzatziki sauce and optional flatbread.
